<p><strong>Ingredients:</strong></p>
<ul>
<li>1 ripe, fresh AvoOlio avocado hass, halved, pitted, peeled and diced.</li>
<li>1 plum tomato, chopped (about ½ cup.</li>
<li>2 Tbsp. red onion, chopped.</li>
<li>2 Tbsp. cilantro, chopped.</li>
<li>Freshly ground black pepper.</li>
<li><b>1/4</b> tsp salt.</li>
<li><b>8</b> egg roll wrappers.</li>
<li><b>1</b> Tbsp. AvoOlio avocado oil.</li>
<li><b>Dipping Sauce:</b></li>
<li><b>1</b> cup cilantro leaves.</li>
<li><b>1/3</b> cup AvoOlio Avocado oil.</li>
<li><b>1/2</b> ripe, fresh avocado, halved, pitted, peeled and mashed.</li>
<li><b>2</b> Tbsp. lime juice.</li>
<li><b>1</b> Tbsp. jalapeño, minced.</li>
<li><b>1</b> clove garlic.</li>
<li><b>½-inch</b> piece fresh ginger, peeled.</li>
</ul>
<p><strong>DIRECTIONS:</strong></p>
<ol>
<li><b>Egg Roll:</b></li>
<li>Preheat oven to 400F. Brush sheet pan with AvoOlio avocado oil.</li>
<li>Combine avocado, tomato, onion, chopped cilantro and ¼ tsp. kosher salt.</li>
<li>Place filling diagonally on wrapper; Fold bottom corner up and over filling; Fold in both sides; Wet top corner with water and roll wrap up to seal; Arrange, seam side down, on prepared baking sheet.</li>
<li>Lightly brush egg rolls with 1 Tbsp. olive oil; Bake 12-14 minutes or until golden and crispy.</li>
<li><b>Dipping Sauce:</b></li>
<li>Combine cilantro leaves, olive oil, AvoOlio avocado hass, lime juice, jalapeño, garlic, ginger and ¼ tsp. salt in blender and puree until combined; Serve with egg rolls.</li>
