AvoOlio Avocado Egg In A Hole

  • 1 ripe, fresh AvoOlio avocado hass, halved, pitted, peeled and diced.
  • 1 plum tomato, chopped (about ½ cup.
  • 2 Tbsp. red onion, chopped.
  • 2 Tbsp. cilantro, chopped.
  • Freshly ground black pepper.
  • 1/4 tsp salt.
  • 8 egg roll wrappers.
  • 1 Tbsp. AvoOlio avocado oil.
  • Dipping Sauce:
  • 1 cup cilantro leaves.
  • 1/3 cup AvoOlio Avocado oil.
  • 1/2 ripe, fresh avocado, halved, pitted, peeled and mashed.
  • 2 Tbsp. lime juice.
  • 1 Tbsp. jalapeño, minced.
  • 1 clove garlic.
  • ½-inch piece fresh ginger, peeled.


  1. Egg Roll:
  2. Preheat oven to 400F. Brush sheet pan with AvoOlio avocado oil.
  3. Combine avocado, tomato, onion, chopped cilantro and ¼ tsp. kosher salt.
  4. Place filling diagonally on wrapper; Fold bottom corner up and over filling; Fold in both sides; Wet top corner with water and roll wrap up to seal; Arrange, seam side down, on prepared baking sheet.
  5. Lightly brush egg rolls with 1 Tbsp. olive oil; Bake 12-14 minutes or until golden and crispy.
  6. Dipping Sauce:
  7. Combine cilantro leaves, olive oil, AvoOlio avocado hass, lime juice, jalapeño, garlic, ginger and ¼ tsp. salt in blender and puree until combined; Serve with egg rolls.
