Ingredients:
- 1 ripe, fresh AvoOlio avocado hass, halved, pitted, peeled and diced.
- 1 plum tomato, chopped (about ½ cup.
- 2 Tbsp. red onion, chopped.
- 2 Tbsp. cilantro, chopped.
- Freshly ground black pepper.
- 1/4 tsp salt.
- 8 egg roll wrappers.
- 1 Tbsp. AvoOlio avocado oil.
- Dipping Sauce:
- 1 cup cilantro leaves.
- 1/3 cup AvoOlio Avocado oil.
- 1/2 ripe, fresh avocado, halved, pitted, peeled and mashed.
- 2 Tbsp. lime juice.
- 1 Tbsp. jalapeño, minced.
- 1 clove garlic.
- ½-inch piece fresh ginger, peeled.
DIRECTIONS:
- Egg Roll:
- Preheat oven to 400F. Brush sheet pan with AvoOlio avocado oil.
- Combine avocado, tomato, onion, chopped cilantro and ¼ tsp. kosher salt.
- Place filling diagonally on wrapper; Fold bottom corner up and over filling; Fold in both sides; Wet top corner with water and roll wrap up to seal; Arrange, seam side down, on prepared baking sheet.
- Lightly brush egg rolls with 1 Tbsp. olive oil; Bake 12-14 minutes or until golden and crispy.
- Dipping Sauce:
- Combine cilantro leaves, olive oil, AvoOlio avocado hass, lime juice, jalapeño, garlic, ginger and ¼ tsp. salt in blender and puree until combined; Serve with egg rolls.
